Bacon Roasted Brussels Sprouts

Prep Time 15 minutes
Cook Time 35 minutes
Servings 6

Ingredients
  

  • 1 tbsp olive oil
  • 12 oz radishes quartered
  • 12 oz brussels sprouts quartered, outer leaves peeled
  • 6 strips Garrett Valley Paleo Bacon chopped
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper
  • 1 tbsp dill fresh, chopped

Instructions
 

  • Prepare bacon using your favorite method. Chop and set aside.
  • Place vegetables in a bowl, season with salt and pepper.
  • Add the oil and toss.
  • Heat oven to 425F.
  • Line a sheet pan with parchment paper. Spread veggies over pan. Roast for 25 minutes until tender.
  • Remove from oven. Mix bacon into vegetables. Season to taste. Top with freshly chopped dill. Enjoy warm.
