It’s obvious that we love bacon, so we’re always looking for ways to include it into meals. Garrett Valley Bacon Bits are an easy way to do so! For this recipe, we’re combining sweet potatoes, bacon bits, and spinach for a scrumptious side dish your whole family will love! Start a new food tradition this Thanksgiving!

Sweet Potato Salad With Bacon

Sweet potato season is back!
Prep Time 10 minutes
Cook Time 20 minutes
Course Side Dish

Ingredients
  

  • olive oil
  • 2 sweet potatoes peeled and cubed
  • 1/2 cup water
  • 1/2 red onion chopped
  • 1/2 cup spinach cooked
  • 1/4 cup Garrett Valley Bacon Bits
  • salt
  • pepper

Instructions
 

  • Heat olive oil in a large nonstick skillet over medium heat. Add sweet potatoes, cook until they begin to soften.
  • Add water and chopped red onions to skillet. Cook about 10 minutes, or until potatoes are tender and start to brown.
  • Add cooked spinach and bacon to skillet. Season with salt and pepper. Stir together.
