Summer Hunter's Stew (Letni Bigos)

Prep Time 10 minutes
Cook Time 30 minutes

Ingredients
  

  • 1 young cabbage chopped
  • 1 carrot (medium sized) chopped or shredded
  • 1 yellow onion (medium sized) chopped
  • 1 package Garrett Valley Polska Kielbasa sliced
  • 3 tbsp olive oil
  • 1 tbsp tomato paste
  • 2 tbsp fresh dill
  • 1/2 tsp caraway seeds
  • 1 bay leaf
  • 1.5 tbsp flour
  • 4 cups vegetable broth

Instructions
 

  • Add 1 tablespoon of olive oil and chopped onion to large heated skillet. Cook until onion is translucent.
  • Add carrot and cabbage, broth, tomato paste, bay leaf, and caraway seeds to skillet.
  • Mix well, cover, and cook for about 20 minutes. Ensure all cabbage is covered.
  • After 20 minutes, check to see if the cabbage has softened. If not, cook until cabbage has cooked through and is soft, checking every 10 minutes. Season with salt and pepper to your liking.
  • While cabbage is cooking, heat 1 tablespoon of oil in a new skillet, add kielbasa and brown it.
  • Add browned kielbasa to cooked cabbage.
  • In a separate pan, cook flour for about 2 minutes. Add last tablespoon of oil and mix together. Add about a cup of the broth from the cabbage pot and mix that together, also. Return this mixture to the cabbage pot and combine, cooking for another 2-3 minutes.
  • Top the stew with dill and serve warm.
