Bacon & Arugula Quiche

Bacon, Butternut Squash and Arugula Quiche

Prep Time 15 minutes
Cook Time 45 minutes
Servings 8 servings

Ingredients
  

  • 1 pie crust
  • 6 slices Garrett Valley Farms Paleo Bacon chopped
  • 2 cups butternut squash chopped
  • 1 small white onion chopped
  • 1 clove garlic minced
  • 6 eggs whisked
  • 3/4 cup milk
  • 3 Tablespoons all-purpose flour
  • 1/8 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/2 teaspoon lemon juice
  • 3 handfuls fresh arugula

Instructions
 

  • Preheat oven to 350F.
  • Prepare (or defrost) pie crust.
  • Cook bacon in a large pan over medium high heat until it's slightly crispy. Remove from pan with a slotted spoon, keeping the grease in the pan.
  • Cook the butternut squash and onion in the bacon grease, until the squash is tender and the onions translucent.
  • Add garlic to the pan and sauté for another minute or so. Remove from heat.
  • In a separate bowl, whisk together the eggs, flour, baking soda, milk, salt, pepper, and lemon juice.
  • Add the cooked vegetables, cooked bacon, and arugula to the bowl. Stir until well combined.
  • Pour the filling into the pie crust.
  • Smooth the filling with the back of a spoon.
  • Bake for 45 minutes. Quiche is done when an inserted toothpick comes out clean.
  • Once out of the oven, allow quiche to rest for 5 minutes. Serve warm.
