Anyone else ready for fall!? Here at Garrett Valley Farms, the air is starting to cool and the leaves are just starting to change. Which means it’s time for bonfires, cozy sweaters, and most importantly, pumpkin! There’s no limit to what foods people are making with pumpkin these days and we are on board to try them all!

We decided to make some pumpkin pancakes! Not only that, but pumpkin pancakes with bacon! The pancakes also have cinnamon, another great fall flavor. This recipe is a perfect way to start your morning, or end your day with warm breakfast for dinner!

Recipe Tips:

Add crumbled bacon to your batter for even more of that bacon flavor. For another option, sprinkle bacon onto the batter while the pancake is cooking.

Really feeling fall flavors? Try adding nutmeg, ginger, or even chai to spice up your pumpkin pancakes with bacon even more!

Try making fresh pumpkin pure instead of canned! It takes more time and effort, and can get really messy. However, it’s a lot of fun! The kids probably want to carve pumpkins anyway. It can be a family project!

Pumpkin Pancakes with Bacon

Course Breakfast

Ingredients
  

  • 1 1/2 cups flour
  • 3 tsp baking powder
  • 2 tbsp light brown sugar packed
  • 1 tsp salt
  • 1/2 tsp cinnamon
  • 1 cup milk
  • 1 cup pumpkin puree
  • 2 eggs
  • 1 tsp vanilla extract

  • whipped cream optional

Instructions
 

  • Cook bacon according to package instructions and set aside.
  • In a bowl, whisk together flour, baking powder, brown sugar, salt, and cinnamon.
  • In a separate bowl, combine milk and pumpkin puree. Then add in eggs and vanilla.
  • Combine wet and dry ingredients together. Stir until blended.
  • On medium heat, ladle pancake batter onto non-stick pan or griddle. Cook until bubbles start to form in batter, then flip. Cook until both sides are golden brown.
  • Repeat until all batter is used.
  • Crumble bacon and sprinkle over the pancakes. Add whipped cream if desired.
