Pumpkin Pancakes with Bacon
Pumpkin in pancakes with bacon, oh my!

- 1 1/2 cups flour
- 3 tsp baking powder
- 2 tbsp light brown sugar packed
- 1 tsp salt
- 1/2 tsp cinnamon
- 1 cup milk
- 1 cup pumpkin puree
- 2 eggs
- 1 tsp vanilla extract
- Garrett Valley Farms Applewood Bacon
- whipped cream optional
Cook bacon according to package instructions and set aside.
In a bowl, whisk together flour, baking powder, brown sugar, salt, and cinnamon.
In a separate bowl, combine milk and pumpkin puree. Then add in eggs and vanilla.
Combine wet and dry ingredients together. Stir until blended.
On medium heat, ladle pancake batter onto non-stick pan or griddle. Cook until bubbles start to form in batter, then flip. Cook until both sides are golden brown.
Repeat until all batter is used.
Crumble bacon and sprinkle over the pancakes. Add whipped cream if desired.
