Anyone ready for fall flavors!? Not only is it pumpkin in everything season, but it’s also apple picking season! Apple picking is a great activity for the whole family. Also, it’s a great way to get outdoors and away from screens! Combining two of fall’s best flavors creates a perfect pallet for soup! Here at Garrett Valley Farms we’re beginning to feel the chill as nights get darker and the air gets colder! Cozying up with a warm soup is the perfect way to end a long day. Try making Pumpkin Apple Soup with your family this week!

Pumpkin Apple Soup

Ingredients
  

  • 6 slices Garrett Valley Farms Applewood Smoked Bacon
  • 3/4 cup Vidalia onion chopped
  • 2 cups Granny Smith Apple peeled and chopped
  • 2 cloves garlic minced
  • 1 tsp salt
  • 1/2 tsp ground black pepper
  • 3 1/2 cups chicken broth
  • 1 15oz can pumpkin puree
  • 1 tbsp maple syrup
  • 1/2 cup half and half

Instructions
 

  • Chop bacon, then fry in a large pot until nicely crisp. Reserve 2 tablespoons of bacon grease in the pot when removing bacon.
  • Heat the bacon grease on medium heat until it starts to shimmer, then add in chopped onion and apples. Cook until apples are soft and onion is translucent, about 7 minutes.
  • Add garlic and cook until the garlic is fragrant, about a minute or two.
  • Add salt, pepper, and 2 cups of chicken broth. Bring to a boil, then remove from heat.
  • Using immersion blender (or regular blender if you don't have an immersion one), combine pumpkin with onions and apple mixture, until all ingredients are pureed. Add remaining chicken broth, and blend until smooth.
  • Put soup back over medium heat, and warm the liquid.
  • Add maple syrup and half and half. Still using immersion blender, combine and blend.
  • Drop in 3 strips' worth of chopped bacon. Use immersion blender to incorporate the bacon into the soup.
  • Ladle into bowls, top with remaining chopped bacon. Serve hot and enjoy!
