In particular, there’s always leftover ham. Which is great but sometimes it’s hard to find new ways to eat all of that ham! It can get boring after awhile.

It is a great combination to start your morning with a heart breakfast. The holiday season, especially, is busy. This recipe is perfect for a relaxing post holiday morning with your family.

Ham Frittata

Time to use those holiday ham leftovers!
Prep Time 15 minutes
Cook Time 20 minutes
Course Breakfast

Ingredients
  

  • 8 eggs
  • 1/3 cup milk
  • 1/2 cup spinach chopped
  • salt
  • pepper
  • 1 tbsp olive oil
  • 1 large potato peeled and diced
  • 1/2 white onion chopped
  • 2 cups Garrett Valley Farms Spiral Sliced Holiday Ham diced
  • 1 cup shredded cheddar cheese

Instructions
 

  • Preheat oven to 450°F.
  • In a bowl, whisk together eggs, milk, spinach, and salt and pepper to taste. Set aside.
  • In a skillet, add olive oil, diced potatoes, and chopped onions. Mix until browned.
  • Add diced ham leftovers to the skillet.
  • Pour egg mixture in the skillet with the ham, onion, and potatoes.
  • Cook over medium heat for 5 minutes, or until you can see the eggs have set around the edges.
  • Transfer the skillet into the oven and bake for 5-10 minutes, or until the eggs have set in the middle.
  • Sprinkle cheddar cheese onto the top and bake until the cheese melts completely, it should be browned and crispy.
