This morning we’re combining some of our favorite things for breakfast. Therefore, it’s time for a Bacon and Egg Avocado! A well-balanced healthy breakfast is really important. Avocados contain a lot of health benefits. They are full of nutrients like vitamins and potassium! Also they have a lot of beneficial fats your body needs. Eggs provide protein and nutrients also. Similarly, bacon even has useful nutrients! Garrett Valley Farms bacon is made all-natural. Therefore it is free of antibiotics or preservatives.

Recipe Tips:

For an even healthier option, try using Garrett Valley Farms sugar free or turkey bacon varieties. It contains less fat than classic bacon, but still has a great flavor!

Try cooking your bacon in the oven! A lot of people cook bacon on a frying pan, which can get messy. Instead, place a wire rack in a rimmed baking sheet (line your baking sheet with foil to make clean up even easier). Place bacon on the wire rim and cook on 400°F for about 15 minutes. Take it out of the oven sooner or later depending on how you like your bacon! This is a great way to cook a lot of bacon without the hassle.

This recipe calls for egg yolks. If you prefer egg whites, or the whole egg, feel free to adjust. Sometimes, the egg whites don’t stay in the avocado as easily as the egg yolks. Try creating rings out of foil to place underneath the avocado so the liquid will remain steady while cooking!

Bacon and Egg Avocado

All you could avo want for breakfast!

Ingredients
  

  • 2 small eggs
  • 1 avocado
  • garlic salt
  • black pepper
  • 2 slices Garrett Valley Farms Dry Rubbed Bacon cooked and cut up

Instructions
 

  • Preheat oven to 425°F.
  • Separate egg yolks and egg whites by cracking the eggs and sifting until only the yolk is left. Set the yolks aside.
  • Cut the avocado in half and take out the seed. The yolk will be going in the cut out left behind by the seed. If the yolk won't fit, scoop out more avocado to make room.
  • Place the avocado halves on a baking sheet lines with aluminum foil. Carefully place the egg yolks on the avocado.
  • Add garlic salt and black pepper as you like.
  • Bake for 15-30 minutes, or until the eggs are cooked how you like them.
  • Add chopped bacon to the top of the avocado. Dig in!
