Nonetheless, we don’t have time to cook soup all day! Luckily, this Ham Broccoli Cheese Soup recipe is both warm, simple, and quick! You only need a half hour to make this delicious meal for your family (or friends)!

Ham Broccoli Cheese Soup

Ham Broccoli Cheese Soup

Ingredients
  

  • 4 pieces Garrett Valley Farms Bacon
  • 1 cup mirepoix chopped onion, carrots, celery
  • 2 cups chicken broth
  • 1 1/4 cup heavy cream
  • 1 tsp cream cheese
  • 1/2 tsp nutmeg
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 2 cups broccoli
  • 2 cups Garrett Valley Farms Black Forest Ham chopped from nugget
  • 2 cups cheddar cheese
  • 1/2 tsp corn starch

Instructions
 

  • Cook bacon in bottom of stock pot, until crispy. Remove bacon, drain on a paper towel lined plate. Chop and reserve for later. Reserve bacon grease.
  • Add mirepoix to bacon grease and cook over medium heat until onion is transparent and soft.
  • Add chicken broth, heavy cream, cream cheese, spices, and broccoli to pot. Simmer over medium heat for 12-15 minutes.
  • Reduce heat to low. Add chopped ham and shredded cheese (in bunches) to the pot. Stir constantly until cheese melts.
  • Sprinkle corn starch on top, and stir in thoroughly, to thicken the broth.
  • Optional: Top with reserved bacon and more shredded cheese. Serve hot!
