Football season is finally upon us! Here at Garrett Valley Farms, we’re looking forward to gearing up in our team colors, watching and analyzing games with friends and family, and most importantly eating a lot of game day snacks! Bonus points if those snacks are variations on tried and true favorites, like these BLT Waffle Sliders!

Who doesn’t love a good BLT? We’re taking this classic sandwich and switching it up for the big game! Not only are we turning them into sliders but we’re using cheesy cornbread waffles instead of bread! Add in some of Garrett Valley Farms’ delicious bacon and it’s the perfect combination that you and your team at home will cheer for!

One of the best parts of this recipe is that it calls for you to use a waffle iron. Which means that there will be delicious “castoffs” to eat until you get the hang of how much batter to use for each waffle. Unless you’re really good with a waffle iron without practice.  Which we weren’t.

We recommend that you bake the bacon, but if you prefer frying it, that’s fine too. So is microwaving it. However you cook it, you just want to get the bacon cooked to how you like it. Because if the bacon is too burnt or too raw, you won’t enjoy the BLT waffle slider no matter how good the waffle is! So mind your bacon while you cook it… preferably before the game.  Because you want to pay attention to the game, and not your bacon, while your team is on the field!

BLT Waffle Sliders

Equipment

  • Waffle iron
  • Cookie sheet
  • Baking rack
  • Aluminum foil
  • Cooking spray

Ingredients
  

  • 1 box cornbread mix or your favorite cornbread recipe
  • 1/2 cup shredded cheddar and gouda cheese
  • 1 package Garrett Valley Farms pork Paleo bacon or your favorite Garrett Valley Farms bacon
  • 1 tomato sliced to desired thickness
  • leaves lettuce of choice

Instructions
 

Make the cornbread waffles

  • Prepare cornbread according to recipe/package instructions.
  • Mix in shredded cheeses thoroughly.
  • Pre-heat waffle iron. When ready, drop in 1/2 cup of batter onto iron, ensuring batter fills all four quadrants of iron. Bake per manufacturer's directions until golden brown. Cool on plate. Use cooking spray on waffle iron plates in between waffles so they won't stick.

Prepare the bacon

  • Line cookie sheet with aluminum foil. Place baking rack inside cookie sheet. Place bacon slices on baking rack.
  • Cook bacon at 400F for 15 minutes.
  • Remove to a paper plate to cool and drain off any remaining grease.

Assemble the sliders

  • Divide waffles into quarters.
  • Spread desired condiments on waffle quarters.
  • Add bacon, lettuce leaves, and sliced tomatoes. Top with waffle to complete slider.
