Corned Beef Poutine

Corned Beef Poutine with Irish Stout Gravy

Cook Time 30 minutes
Servings 4

Ingredients
  

  • 2 cups Garrett Valley Farms Corned Beef shredded
  • 3 tablespoons butter unsalted
  • 1/2 cup vidalia onion finely diced
  • 2 teaspoons garlic minced
  • 3 tablespoons all-purpose flour
  • 1 bottle Irish Stout 11.2 ounce bottle
  • 1 cup beef stock
  • 1 tablespoon Dijon mustard
  • 1/2 tablespoon Worcestershire sauce
  • salt & pepper to taste
  • 4 cups french fries frozen
  • 2 cups white cheddar cheese curds*

Instructions
 

Corned beef

  • Prepare the corned beef as you normally would. Dice 2 cups for this recipe.

Prepare the gravy

  • Melt butter in a medium sized saucepan over medium heat.
  • Add onions to the melted butter, cooking until translucent (about 5 minutes).
  • Add the minced garlic, and cook for 30 seconds. Garlic should be fragrant.
  • Add flour, cook for 1 minute, stirring constantly.
  • Add the stout, beef stock, mustard, and Worcestershire sauce. Bring to a boil. Lower the heat and simmer for 10 minutes until gravy starts to thicken. Season with salt and pepper.

Make the poutine

  • Bake the french fries according to package directions.
  • Plate the french fries, topping with cheese curds and corned beef.
  • Ladle gravy over the fries to taste. Enjoy warm!

Notes

*If you can't find cheese curds, shredded white cheddar cheese (or any white cheese) can be substituted.
