Bacon Wrapped Scallops

Scallops wrapped with bacon, need we say more?

Ingredients
  

  • 8 scallops
  • 8 slices Garrett Valley Farms Classic Dry Rubbed Bacon
  • 2 tbsp olive oil
  • salt
  • pepper

Instructions
 

  • Preheat over to 425°F.
  • Place a wire rack in a rimmed baking sheet (line your baking sheet with foil to make clean up easier).
  • Pat scallops dry with a paper towel. Wrap scallops in a slice of bacon. Use toothpicks if necessary, to secure.
  • Place wrapped scallops on wire rack. Drizzle olive oil over scallops. Sprinkle salt and pepper.
  • Bake for 20 minutes, until scallops are tender and the bacon is fully cooked.
