Bacon Wrapped Scallops
Scallops wrapped with bacon, need we say more?

- 8 scallops
- 8 slices Garrett Valley Farms Classic Dry Rubbed Bacon
- 2 tbsp olive oil
- salt
- pepper
Preheat over to 425°F.
Place a wire rack in a rimmed baking sheet (line your baking sheet with foil to make clean up easier).
Pat scallops dry with a paper towel. Wrap scallops in a slice of bacon. Use toothpicks if necessary, to secure.
Place wrapped scallops on wire rack. Drizzle olive oil over scallops. Sprinkle salt and pepper.
Bake for 20 minutes, until scallops are tender and the bacon is fully cooked.
