Spinach Cheese Puff
Crispy, cheesy, and packed with sausage and spinach for a great lunch!

- 2/3 cup spinach cooked and drained
- 1 package Garrett Valley Farms Smoked Chorizo Sausage sliced
- 1 cup shredded cheddar cheese
- 1/4 cup grated Parmesan cheese
- 16 oz pizza dough
- 1 egg beaten
Preheat oven to 375°F. Spray cookie sheet with cooking spray.
Place cooked spinach in large bowl. Add sausage, cheddar, and 3 tablespoons of Parmesan cheese to the bowl. Stir until combined.
Divide pizza dough into 8 balls. Roll and press each ball into a flat circle. Place meat mixture onto one half of each of the balls, and fold dough over filling. Seal together by pinching around the edges.
Put dough balls onto cookie sheet. Brush tops with beaten egg.
Bake 20 minutes or until dough is golden brown. Top with remaining Parmesan cheese. Cut into slices.
