We love sandwiches. Especially for lunch. They’re easy to assemble, can be made in a minute, and they’re yummy! Sometimes though, the same old sandwiches can get boring. Don’t worry though! There are lots of ways to put some more creativity into lunchtime. How about trying this Spinach Sausage Cheese Puff for lunch this week to change it up?

Pizza dough has a lot more uses than just to make pizza. For this particular recipe, we’re dividing up the pizza dough and creating individual pizza pockets, or puffs! We are also stuffing these puffs with cheese, sausage, and spinach for a great flavor. Lunch doesn’t have to be the same thing every day. It also doesn’t have to be complicated! We’re confident this recipe will give your taste buds something new to look forward to!

Recipe Tips:

We used Garrett Valley Farms Smoked Chorizo Sausage for this recipe. The Spanish style flavor adds a smokiness we enjoy. There are other options though so if you prefer one of our other sausages, feel free to change it up!

Don’t forget to spray your cookie sheet!

Spinach Cheese Puff

Crispy, cheesy, and packed with sausage and spinach for a great lunch!

Cook Time 20 minutes
Course Lunch

Ingredients
  

  • 2/3 cup spinach cooked and drained
  • 1 package Garrett Valley Farms Smoked Chorizo Sausage sliced
  • 1 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 16 oz pizza dough
  • 1 egg beaten

Instructions
 

  • Preheat oven to 375°F. Spray cookie sheet with cooking spray.
  • Place cooked spinach in large bowl. Add sausage, cheddar, and 3 tablespoons of Parmesan cheese to the bowl. Stir until combined.
  • Divide pizza dough into 8 balls. Roll and press each ball into a flat circle. Place meat mixture onto one half of each of the balls, and fold dough over filling. Seal together by pinching around the edges.
  • Put dough balls onto cookie sheet. Brush tops with beaten egg.
  • Bake 20 minutes or until dough is golden brown. Top with remaining Parmesan cheese. Cut into slices.
